With upfront fruit flavors, moderate tannin, and balanced acidity, Merlot is an ideal food pairing wine and a safe bet for any occasion. Yes, it doesn’t command the respect that a bold Cabernet Sauvignon often does, but it doesn’t command the same price tag either, often leading to a better quality-value ratio. So, if you’ve been put off by cheap commercial interpretations or an off-hand Paul Giamatti quote from over 15 years ago, we strongly recommend revisiting a wine loved by beginners and experts alike.

Did You Know? Merlot translates to “little blackbird” in an old regional French dialect.

Expect your palate to be greeted with flavors of black cherry, plum, chocolate, dried herbs, and cedar. Most Merlot wines sit in the middle of the red wine spectrum, with medium levels of tannin, acidity, and alcohol. Exceptional Merlot wines are so bold, they can be confused for Cabernet Sauvignon.

It’s darker than Cabernet Sauvignon and contains high amounts of health-invigorating antioxidants.

When you taste Cabernet Shiraz Merlot  you’ll be greeted with a punch of flavor that tapers off and then has a peppery note. Because of its front-loaded style, it is often blended with grapes that add more mid-palate to help make the wine taste more complete.

Try Using Herbes de Provence Spice your foods with a special blend of herbs originating from the South of France. The floral aromatics of Herbes de Provence with lavendar, fennel and thyme will compliment well.

Soft Cheeses Are Better Work with softer stinkier cheeses, the fat texture and earthy flavors in a cheese such as Abbaye de Belloc will absorb the high tannin in Syrah.

Barbecue Tip The peppery spice in  Shiraz works wonders with a peppery barbecue. Try spicing your meats with anise and clove to bring out those subtle nuances in the wine.

Researchers studying the effects of certain foods on the tongue found that the tannins in Cabernet Sauvignon act as “scrapers” to fats and proteins that collect on your tongue from the food you eat. Steak has higher levels of proteins and fats and thus need a wine with higher tannin.
