A sweet, moist cake loaded with fruit and nuts.
Ingredients
- ¾ cup dried cherries
- ¾ cup raisins
- 3 cups apple cider or juice
- 1 cup unsweetened applesauce
- 2 eggs
- 1 cup walnuts, chopped

2 Tbsp. Sweet Mulled Cider Mix
- 2 tsp. melted butter
- 3 tsp. flour
- 1 Tbsp. powdered sugar
- Whipped topping (optional)
Directions
- In medium saucepan, combine first 3 ingredients. Bring to a boil, reduce heat and simmer for 30-35 minutes or until the liquid is absorbed. Cool 15 minutes. Preheat oven to 350°.
- In large bowl combine the cake mix, applesauce and eggs; stir until mixed. Add in the cherry mixture, nuts and dry mulled cider mix.
- Prepare bundt pan with melted butter and flour – see tip below. Spread batter into bundt pan. Bake 47-50 minutes or until a toothpick inserted in the center comes out clean. Cool completely.
- Sprinkle with powdered sugar just before serving. Serve with a dollop of whopped topping, if desired.
Tip: Brush 2 tsp. melted butter into bundt pan and sprinkle 3 tsp. flour into pan. Tap pan to distribute flour and pour out any excess.
